Tall Paul’s Cranberry Tips

  • Cranberry pairs brilliantly with all poultry, breads and wraps
  • Great with turkey, chicken, duck and pork
  • For something totally different, try Cranberry pancakes or even Cranberry and banana cheesecake, Cranberry, lime and carrot cake (a moist dish that doesn’t even need icing)
  • My favourite is Cranberry with cheese and crackers or Cranberry & Orange on toast

Cranberry and Orange contains alcohol – Butterscotch Schnapps

Tall Paul’s Pesto Tips

  • 1 tablespoon per person is recommended over cooked drained pasta. Toss through add parmesan cheese and cracked pepper. Leave to chill for cold pasta salads
  • As a snack or finger food at dinner parties – spread our Pesto over focaccia or Turkish bread with parmesan cheese and heat in a moderate oven for 10 minutes
  • Add 1 tablespoon to soups, gravies and sauces for flavour and texture
  • Mix with breadcrumbs for a great stuffing
  • Combine with sour cream for dips, fillings in sandwiches or over potatoes
  • Spread on toast, use on pizza bases and then add your favourite toppings
  • Make stir-fries interesting. Add a tablespoon to onions, capsicums and squash
  • Make a cream sauce. Add 2 parts Pesto Sauce to 4 parts cream and reduce on a high heat till thickens. Pour over steak, chicken, chops or even fish
  • Place some oil over opened pesto jar to prevent discolouration

Remember to refrigerate before and after opening and has a best before of 4 months

Tall Paul’s Chilli Sauces

  • Adding chilli to any dish will give it an immediate kick. The degree or desired heat is determined by which product you use. (rating)
  • Chilli products added to mayonnaise will create a dressing with bite for salads, meats or breads
  • Mix chilli sauce with seasoned mince to create spicy meatballs
  • Add to rice and vegetables to create an Asian type feast
  • Great through pastas, casseroles and with Mexican food
  • Chilli sauces tend to be hotter and spicier when they are heated

Although not essential we recommend you refrigerate our chilli sauces as they are so concentrated their best before date can exceed 10 months with proper storage

Tall Paul’s Mustard Tips

  • Excellent with cold meats and sandwiches
  • Serve with cheese platters and crackers
  • Add a dollop of mustard to scrambled eggs for extra flavour
  • Our mustards are a perfect spread over roast chicken, pork or beef
  • Brush onto fish fillets before baking, the mustard creates a flavourful crust that’s hard to match
  • Serve with savoury pastries, quiches, burgers, sausages and steaks.
  • Mix with stuffing for extra flavour
  • Add mustard to steamed or roast vegetables.
  • Add a teaspoon or two to dips
  • The reason for using a mustard in a salad dressing or vinaigrette may seem obvious, but it’s not just for flavour – mustard acts as an emulsifier, combining the oil and vinegar so it doesn’t separate.

Store mustards in a cool dark place to retain freshness. A light shake will return colour to product if exposed to sunlight.

Refrigerate product after opening. Mustards have a minimum of 10 months best before

Tall Paul’s Dip Tips

  • Apart from the obvious, pairing with crackers and breads, dips can be used in various ways
  • Toss your favourite dip through hot cooked pasta, season with cracked pepper and sprinkle with chopped chives and parsley
  • Spread Hommus on bagels or toast, instead of butter or cream cheese
  • Blend your favourite Hommus with egg, chicken or tuna for a tangy protein rich sandwich or wrap
  • Smoked Salmon dip on wholemeal bread with asparagus spears creates a tasty snack
  • Try Artichoke & Garlic dip on top of steak
  • Make a white sauce and fold in Smoked Salmon dip or Artichoke & Garlic dip and pour through pasta or over steak
  • By thinning dips with milk or cream you create an interesting salad dressing
  • Dips mixed with mashed potatoes can be used for fillings in pastries
